Joshua Han, sous chef at Broadway by Amar Santana, has passion and creativity that reflects the experiences of the mentors he has worked under.  Putting in time at restaurants like The Crosby, Charlie Palmer at Bloomingdale’s, and now is able to share his radiant smile and joy for cooking at the chef’s table at Broadway, six nights a week.  After a busy night manning the chef’s counter, the kitchen decided to enjoy a little bit of late night basketball.  After an adrenaline filled game, Josh benched it for some cool down time, and began some late night talk about how to turn one simple rib eye on the menu into multiple courses using classic techniques and creative ingredients.  As a inspired chef, here is the menu that he brought to life:
