Eggs evoke a sense of wonder, rebirth, celebration, all things new, and are the perfect symbol for the New Year. My farm fresh eggs were no exception, a sense of wonder indeed! Their speckled shells were unique, and beautiful, each one having its own special characteristics. I lovingly cradle these treasures from our rancher Dave, from Da-Le Ranch, his free range chickens have so much flavor! I lightly cracked the egg on the side of the bowl, eagerly anticipating whipping it up in a frothy, light scramble. But my whisked stopped in midair at the sight of an egg with two yolks! Some say it means good luck, I say it’s just another nutritious+delicious food from a free range chicken, clucking down in Lake Elsinore, sharing its perfect goodness at the Newport Beach Farmers’ Market.
The ultimate judge of a Chefs skill is the making of a perfect egg. And my perfect egg is poached, served on a lightly toasted English muffin, drizzled with a hollandaise sauce, & sprinkled with paprika. Absolute perfection.
